Flavor profile Thanks to the omni roast, the coffee retains its characteristic sweetness in both filter coffee and espresso, with each preparation revealing a slightly different aspect of its character. Filter The coffee brews gently, smoothly, and very harmoniously in the filter. You’ll find notes of: milk chocolate peanut butter candied fruit sultánok dried figs The acidity is very subtle and elegant, while the sweetness and creamy texture remain dominant. Espresso The espresso has a full body and a more intense chocolate character. Fazenda do Cruzeiro – a tradition since 1923 The Fazenda do Cruzeiro farm is one of Brazil’s historically significant farms, with a tradition spanning more than a century. It is located in the Santo Antônio do Amparo region and is currently managed by Ivan Junqueira Ribeiro, who combines generations of experience with a modern approach to growing specialty coffee. The farm spans more than 1,000 hectares of land, with coffee plantations covering approximately one-third of that area. Part of the prestigious Sancoffee partnership Fazenda do Cruzeiro is a member of the renowned Sancoffee cooperative, one of the most important organizations promoting specialty coffee in the Campo das Vertentes region. Cooperation helps farmers: improve production quality, introduce modern technologies, promote sustainable management, and elevate Brazilian specialty coffee to a world-class level. Yellow Catucai – a yellow variety with exceptional sweetness This lot consists of the variety Yellow Catucai, which you’ll recognize by its characteristic yellow coffee cherries. It is a hybrid developed by the Brazilian Coffee Institute in 1988. This variety is particularly popular because: high sweetness, low acidity, resistance to coffee rust, and lower irrigation requirements. It is precisely these characteristics that help farms operate more sustainably and stably, even under more challenging conditions. Natural processing – maximum sweetness The coffee was processed using the traditional Natural dry method, which is extremely popular in Brazil. After harvesting, the perfectly ripe yellow cherries are dried whole on concrete patios for approximately 20 to 25 days. During drying, the sweetness from the pulp is gradually transferred to the bean, creating: fuller body, lower acidity, intense chocolate flavor, and a distinct sweetness. After drying, the beans are allowed to rest so that their flavor profile stabilizes and achieves maximum harmony. Who is this coffee ideal for?
